Introduction

Ingredients

1/4 cup diced onions
1/4 cup diced sweet peppers
8 eggs
1 cup diced potato hashbrowns
10 turkey sausage fully-cooked links (1 package Jimmy Dean's)
1/2 cup low fat cheddar or colby jack cheese
1/4 cup 2% milk
Tips
These egg muffins are really loaded. Reducing the amount of turkey sausage, eggs, potatos, or cheese would bring down the calories some.
Change up veggies, cheese for many different versions. Add hotter peppers or hot sauce for more of a bite!
I make these and freese for a quick, on-the-go breakfast.
Directions
Preheat oven to 350%.
Sweat the onions and peppers in a frying pan unless you prefer crisper veggies. Cut up turkey sausage and cheese into small bits. Mix all ingredients. Spray 6 holed muffin pan with cooking spray and fill evenly. Bake about 20 minutes. Keep checking eggs to see when they get to the consistancy you prefer. Run knife around edge to release eggs.
