    All your veggies that are getting close to expiration and you don't want to have to throw out! :) I chose, a cauliflower, onions, garlic cloves, leeks, celery, carrots, collard greens, cilantro, and parsley.

    Toss in some Better than Boullion vegetable base, a couple cups of water, some spices to your taste, and 1 cup raw quinoa (last half hour of cooking).

    Yum! and freezable. :)


1. Chop all your veggies into bits
2. Throw in a crockpot along with everything except the quinoa
3. Set on High, and leave it to stew for about 7.5 hours
4. Set on Low, and stir in dry quinoa
5. Stew about 1/2 hour longer
garnish to your taste!

Serving Size: makes 8 heaping cup fulls
