Ingredients

    1/3 cup white flour
    1/2 teaspoon baking powder
    1/8 teaspoon salt
    1/2 tablespoon olive or canola oil
    1/3 cup buttermilk
    1 large egg
    2 tablespoons cilantro, chopped
    1 scallion, chopped
    1/4 jalapeņo (optional), diced

Tips

If you want the pancakes to be extra fluffy, you can separate the egg yolk from the whites and beat the egg whites into stiff peaks in a separate bowl before folding them into the rest of the batter.


Directions

Mix all ingredients just until batter is smooth with an electric mixer or by hand with a whisk. Do not over mix, or your pancakes will be heavy. Heat a griddle on medium low heat brushed lightly with canola or olive oil. Ladle 1/3-1/2 cup of batter on hot griddle. Cook for 3-4 minutes, checking that underside is golden before flipping (edges may or may not bubble before flipping). Cook on opposite side for a another few minutes until golden.
