Ingredients

    Bread flour 2 cups
    Baking powder 1/2 tsp
    Mixed spice 1/2 tsp
    Nutmeg
    Eggwhites 1/4 cup
    Sweetzfree 13 drops
    Almond oil 1/3 cup
    Raisins 1/3 cup
    Currants 1/3 cup
    Milk 1/4 cup or more if needed

Tips

If you can't find Sweetzfree, use any sweetener. For Splenda use 1/2 cup.


Directions


In mixer with dough hook or in a large bowl with a spoon, mix together the flour, baking powder and spices. In a small bowl, mix the Sweetzfree into the eggwhites. Add the oil to the flour, working it into the mixture until the mixture is like breadcrumbs. Add the eggwhites and mix. Add the raisins and currants, and stir in enough milk to make the mixture stick together well into a stiff dough.
Heat the griddle at medium. Flour a surface and roll the dough out until it’s about 1/4" thick
. Use a 2" cookie cutter, and keep cutting until all the dough is used up, re-rolling as necessary.


Cook 3-5 minutes per side until golden brown, turning once. Can be eaten warm or cold.
