Introduction

Ingredients

    2 pillsbury pie crusts
    about 3 chicken breast halves - diced
    1 c diced carrots
    1 c diced celery
    .5 cup diced onion
    .75 cup frozen corn
    olive oil
    corn starch
    salt pepper to taste
    1 can chicken broth
    1/2 cup milk
    1 tsp poultry seasoning

Tips

place foil over top crust after 30 min to prevent burning.


Directions

saute chicken in olive oil - remove from head
cook vegs in microwave
add 1 can chick broth and poultry seasoning to pan
whisk together cold milk and corn starch and add to pan
continue to stir until mixture comes to boil and thickens.
add salt/pepper to taste
combine sauce, chicken and vegetables; mix well

prepare pillsbury pie crusts according to package directions in a 9" glass pie dish. Place bottom crust in dish, fill with mixture, top with 2nd pie crust.
bake in oven for 30-45 min or until bottom crust is cooked and top crust is golden
