    8 oz Barilla plus penne
    2 c. raw cauliflower florets
    3 oz. baby bella mushrooms chopped
    1.5 c. Classico Florentine
    1 lb. whole milk ricotta
    1T. dried parsley
    salt and pepper to taste
    1 oz romano cheese
    1 egg
    1 c. 5 cheese Italian blend


Cover the casserole for the first 30 minutes. Uncover when you add the cheese.


Boil pasta per package. Add cauliflower last 5 minutes of cooking. Drain. Add chopped mushrooms. Pour 1/2 c. sauce into bottom of the casserole. Mix together remaining ingredients except shredded cheese blend. Add pasta mixture to cheese mixture. Pour into casserole. Top with remaining sauce. Bake at 350 for 30 minutes. Top with shredded cheese. Bake for an additional 15 minutes.
