Ingredients

    1 cup Uncle Ben's Whole Grain Brown rice
    2 lbs. chicken breast, boneless, skinless - diced
    8 oz. fresh mushrooms - diced
    1-1/2 cups chopped onion
    3 cups chopped zucchini
    3 tbsp. olive oil
    7 tbsp. low sodium soy sauce
    2 tsp. Mrs. Dash seasoning
    1 tsp. minced garlic
    1 tbsp. lemon juice
    1/2 cup finely diced carrots
    1/2 cup Sweet Peas
    2 eggs, scrambled
    1 cup whole grain brown rice (dry)

Tips

This recipe is made to be low-sodium. You can add salt for added flavor if your diet allows it.


Directions

Prepare 1 cup of dry rice as directed by package. It should yield 4 cups cooked rice. Flavor with a dash of salt.
IN SKILLET #1
Stir fry chicken in 1 tbs. olive oil and 2 tbsp. soy sauce. Season with 1 tsp. Mrs. Dash and 1/2 tsp. garlic. When meat is tender, add 1 tbsp. lemon juice and mushrooms. Hold warm.
IN SKILLET #2
Stir fry zucchini and 1 cup onion in 1 tbsp. olive oil, 1 tbsp. soy sauce. Season with 1 tsp. Mrs. Dash and 1/2 tsp. garlic.
REMOVE VEGETABLES FROM SKILLET and use it to make rice:
In 1 tbsp. olive oil, scramble two eggs with 1/2 cup onion and 1/2 cup carrots. Add 3 tbsp. soy sauce, peas, and pre-cooked rice. Heat through.

5 servings: 1 cup fried rice, 1/2 cup zucchini and onion mixture, 5 oz. chicken and mushroom mixture.

Salt and pepper to taste

Serving Size: Makes 5 servings: 5 oz. chicken mixture, 1 cup rice, 1/2 cup vegetables
