Ingredients

    1/2 cup dry quinoa
    1/4 package tofu
    1 can mixed beans (Blue Menu 6 Bean Medley
    1 can diced tomatos (no salt)
    1 can tomato paste
    1 cup diced red and orange peppers
    1 cup sliced or chopped carrots
    1/2 a large onion
    1 jalapeņo pepper, sliced, seeds removed
    (Any other vegetable desired)

    Chili powder, cumin, onion powder and garlic to taste.

Directions

Heat slow cooker on high and begin to boil the quinoa with 2 cups of water. When it starts to "fluff up", begin adding the beans, tomatoes, tomato paste and vegatables, adding the jalapeno last. Simmer for a few hours, stirring occasionally and adding in the spices closer to serving time! Enjoy topped with Nutritional yeast and/or vegan sour cream and save the leftovers!
