Introduction

A very light way to make a classic cake, using diet soda/club soda in cake mix, sugar-free jello and light whipped topping. A very light way to make a classic cake, using diet soda/club soda in cake mix, sugar-free jello and light whipped topping.

Ingredients

    1 box white cake mix
    1 box (4-serving) suger-free jello of choice
    1 can/12 oz. club soda
    1 (8 oz.) tub light whipped topping
    1 cup boiling water
    1/2 cup cold water

Directions

Preheat oven to 350 degrees. Spray cake pan with nonstick cooking spray. Mix cake mix and club soda/diet soda with whisk in large bowl. Pour into prepared pan. Bake according to box directions, about 30-40 minutes, until toothpick inserted comes out clean. Let cool 15 minutes. Poke holes all over cake with large fork/knife. Mix boiling water with jello until disolved (about 2 minutes). Pour cold water in and stir. Pour over cake evenly. Refrigerate 3 hours. Spread whipped topping over cake. Refrigerate 1 hour. Serve. For festive touch, can put sprinkles on top.
