Ingredients

    2 cups semi-sweet chocolate chips
    2 Tbs butter-flavored shortening
    1 tsp instant coffee granules
    3 eggs
    1-1/4 cups sugar
    1 tsp vanilla extract
    1 cup pecans, chopped
    6 Tbs all-purpose flour
    1 tsp cinnamon
    1/2 tsp baking soda
    1/4 tsp salt

Directions

Combine chocolate chips and shortening in a medium saucepan over low heat; heat until chocolate chips are about halfway melted, add instant coffee granules, and stir until smooth. Cool.

Beat together eggs and sugar until light and lemon-colored, about 4-5 minutes. Add chocolate mixture and vanilla; beat on low speed until combined.

Add remaining ingredients; beat on low speed until combined.

Place teaspoonful-size cookies on greased baking pans. Bake at 350 degrees for 8-10 minutes, or until top is just set. Do not overbake.

Cool on cookie sheets 1-2 minutes, then transfer to cool completely.

Powdered sugar or a pecan half may be used to garnish.
