Introduction

I threw this stuffing together to go inside a chicken before roasting. I used finely diced leek and carrot, but any vegetable could be substituted. Suitable for someone following a gluten-free or protein type metabolic typing diet. I threw this stuffing together to go inside a chicken before roasting. Ingredients


    Amaranth Grain, 1/2 cup dry / 1 cup cooked
    Leeks, 1 leek - chopped
    Carrots, raw, 1 medium - diced
    Olive Oil, 1 tbsp
    Salt and pepper to taste

Tips

Leftover amaranth from a previous meal would work well here.
Substitute rice or quinoa for the amaranth if desired.


Directions

Cook the leek and carrot in a pan of salted water.
Stir together with the cooked amaranth.
Add 1 tablespoon olive oil
Season to taste.

Stuff into the cavity of a roasting bird and cook as directed.

Serving Size: Makes enough to stuff a 1kg chicken / 2 servings
