Introduction

A lemon chicken that's baked instead of breaded and fried. A lemon chicken that's baked instead of breaded and fried.
Number of Servings: 5

Ingredients

    2 chicken breasts (bone-in, skin on)
    3 thighs (bone-in, skin on)
    2 fresh lemons
    1 large sweet onion
    1 c chicken stock
    1 c cream of chicken/onion/celery soup (your preference)
    ~ 4 T butter
    1/4 c white wine (if desired)

Tips

Don't get carried away and add the lemon juice to the pan! it gets *too* lemony!


Directions

slice onion and lemons as thinly as possible.
Preheat oven to 450°F.
arrange chicken pieces in baking pan.
lay lemon and then onion slices over the chicken.
Bake chicken, uncovered, for 10 minutes.
Add broth and soup (and wine, if desired) to pan liquid with chicken (should just cover pan bottom) and cover with foil.
Reduce heat to 350-325°F and bake for about 45 minutes, or until juice runs clear.
Uncover and dot each piece with butter. Broil to just brown the tops.
You can remove the solids and thicken the liquid for a gravy or sauce if desired.
