Ingredients

    2 cup sliced potatoes (6 med)
    1 garlic
    1 onion, finely chopped and sauteed till soft
    3 cup water
    3 cup milk (I use 2%)
    3 Tbsp butter and cornstarch
    salt & pepper to taste

Tips

This soup is yummy served with croutons or buttered crumbs.


Directions

Boil potatoes and garlic in the water until tender. Put potatoes and garlic through a ricer and add back to the water. Add the onions to the potato water mixture. In a sauce pan melt butter and stir in cornstarch. Add milk and stir till thick. Add to potato mixture. Simmer over low heat until reheated and ready to serve.

Do not boil.
