Introduction

Easy and delicious. Easy and delicious.
Number of Servings: 1

Ingredients

    1 slice turkey bacon
    2 Tbsp onions, chopped
    1 egg
    2 egg whites
    Splash milk
    1 cup fresh spinach
    1/2 oz. crumbled feta
    Black pepper to taste

Tips

I use butter flavored cooking spray; I think that it gives the onions better flavor and makes the recipe taste more unhealthy lol. To measure the milk for the eggs, I use an egg shell from one of the eggs in the recipe. I pour the milk into a half of it, and fill it to slightly under full.

Directions

Fry turkey bacon in a small, non-stick skillet. Remove and allow to cool. Spray skillet with non-stick cooking spray and add onions. Cook until golden and tender, about 5 minutes. Mix one egg, two egg white, and a little bit of milk. Move the onions over a bit, respray the pan, and add the eggs. Scramble the eggs and onions together until the eggs are nearly done, then add the spinach and cook until almost wilted. Add the feta and pepper and cook until eggs are done, spinach wilted, and feta melted. Plate up and eat!
