Ingredients

    2 large eggs, beaten
    1 3/4 cups skim milk
    1/4 cup canola oil
    1/4 cup unsweetened applesauce
    1 tsp. vanilla extract
    1 cup whole wheat flour
    1/2 cup flax seed meal
    1/4 cup wheat germ
    1/4 cup all-purpose flour
    4 tsp. baking powder
    1 Tbsp. sugar
    1/4 tsp. salt

Tips

I usually double the recipe and it makes 9 waffles in my waffle iron. I freeze any extras for a quick breakfast during the week.


Directions

In a large bowl, whisk together the eggs, milk, oil, applesauce and vanilla. Beat in whole wheat flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar and salt until batter is smooth.

Preheat waffle iron and coat with cooking spray. Pour 1 cup batter into the waffle iron and cook 5 minutes until crisp and golden brown.

Serving Size: Makes 6 waffles
