Ingredients

    4 C fresh baby spinach
    1 C orzo pasta (cook according to package directions)
    1/4 tbsp lemon zest
    1/4 C lemon juice
    1 tbsp EVOO
    1/2 tsp salt
    1 tsp minced garlic
    1/3 tbsp homey (or to your taste)
    1/4 tsp balck pepper (or to your taste)
    1/2 C chopped red pepper
    1 Chicken breast (no skin) baked
    1/2 cup chopped cucumber
    1/3 C chopped green onion
    5 sprigs fresh dill chopped
    1/2 C cheese (I used feta)

Directions

Cook orzo according to package directions and drain. Bake chicken ahead of time and allow to cool. Shred chicken. Compine other vegetables. Mix other spices into dressing and add to vegetables/orzo and chicken. Cool in refrigerator at least 2 hours.
