Ingredients

    2 (1-inch-thick) bone-in pork chops
    ¨ù teaspoon salt, divided
    ¨û teaspoon pepper, divided
    2 teaspoons olive oil
    1 medium sweet potato, sliced into ¨ù-inch
    rounds
    ¨ö medium sweet onion, sliced into ¨ù-inch
    rounds
    1 small Granny Smith apple, peeled, cored and
    sliced into ¨ù-inch rounds
    2teaspoonsmaple syrup

    ¨ö loaf whole wheat ciabatta bread
    2 tablespoon extra virgin olive oil

Directions

Preheat oven to 350 degrees. Season pork
chops with half of salt and pepper. Heat oil over
medium-high heat in an ovenproof skillet with a
lid. Brown pork chops 1 minute per side and
remove from heat. Place sweet potato, onion
and apple evenly on top of pork chops. Add ¨÷
cup water to skillet and sprinkle with remaining
salt and pepper. Drizzle with maple syrup.
Cover skillet and bake 35 - 40 minutes, or until
a meat thermometer inserted into pork registers
145 degrees.

Preheat oven to 375 degrees. Slice bread into
¨ö-inch-thick slices. Arrange on baking sheet in
single layer. Brush slices with olive oil to lightly
coat. Bake for several minutes until lightly
toasted.
