    2 (1-inch-thick) bone-in pork chops
    teaspoon salt, divided
    teaspoon pepper, divided
    2 teaspoons olive oil
    1 medium sweet potato, sliced into -inch
    medium sweet onion, sliced into -inch
    1 small Granny Smith apple, peeled, cored and
    sliced into -inch rounds
    2teaspoonsmaple syrup
    loaf whole wheat ciabatta bread
    2 tablespoon extra virgin olive oil


Preheat oven to 350 degrees. Season pork
chops with half of salt and pepper. Heat oil over
medium-high heat in an ovenproof skillet with a
lid. Brown pork chops 1 minute per side and
remove from heat. Place sweet potato, onion
and apple evenly on top of pork chops. Add
cup water to skillet and sprinkle with remaining
salt and pepper. Drizzle with maple syrup.
Cover skillet and bake 35 - 40 minutes, or until
a meat thermometer inserted into pork registers
145 degrees.
Preheat oven to 375 degrees. Slice bread into
-inch-thick slices. Arrange on baking sheet in
single layer. Brush slices with olive oil to lightly
coat. Bake for several minutes until lightly
