Introduction

I wanted something lowfat, but still tasty. Unfortunately, I had a blonde moment, and forgot the egg (beaters), baby corn and peas. It still tasted pretty good! I wanted something lowfat, but still tasty. Unfortunately, I had a blonde moment, and forgot the egg (beaters), baby corn and peas. It still tasted pretty good!

Ingredients

    1 c uncooked brown rice
    2-1/4 c water
    3 medium carrots, coarsely chopped
    2 stalks celery, coarsely chopped
    2 T reduced sodium soy sauce


Directions

Cook rice in water according to package directions.

Spray non-stick skillet or wok with Pam (I used the olive oil spray), and heat until sizzling.

Add cooked rice and vegetables; mix well. Add soy sauce; stir well. Continue cooking 5-10 minutes more until vegetables are cooked through and rice is starting to get a little crispy.

Makes 4-1/2 cup servings.

    I just used what veggies I had... grated carrot, a little zucchini, onion, celery, and 1/2 an orange and green pepper. Looking forward to having the leftovers... - 3/15/11

    I am going to try this one. I can't eat eggs so I will not put them in it. I suppose you can add whatever veggies you want. Sounds good.....I will make for my lunch tomorrow! - 11/16/08

    Incredible!
    I tried this one last night and added one egg to it to give it that "fried rice" feel. My daughter was completley fooled and had no idea it was brown rice instead of white. She even took it in her school lunch today along with the Honey Garlic Pork chops I made along side of it. Served with Edamame. - 8/20/08
