Ingredients

    8 oz uncooked high fiber whole wheat pasta
    10 oz fresh spinach
    15 oz can corn, drained
    15 oz can black beans, drained and rinsed
    1 cup salsa
    1 medium bell pepper, diced
    10 oz can diced tomatoes with green chilies
    *ground cumin, garlic powder, onion powder, cayenne pepper, black pepper, lime juice to taste

Directions

Cook pasta according to package. Place spinach in colander used for draining pasta. Drain pasta over spinach (the hot water will help wilt the spinach). Place diced bell pepper in large bowl/container and put hot pasta and spinach on top (will help soften bell pepper). Let sit for 5 - 10 minutes. Add the rest of the ingredients and mix. Enjoy hot or cold.
