Introduction
This was GOOD!! A lot of flavor and very few calories. I used Ragu lite Parm alfredo sauce and pesto from Costco. I think you could add some white wine or chicken broth if you wanted the sauce a little thinner, or if you wanted to toss over pasta. This was GOOD!! A lot of flavor and very few calories. Ingredients

10 oz. skinless boneless chicken cut into bite size pieces
1 tsp olive oil
1 tsp crushed garlic
1/4 tsp garlic salt
1 tsp Italian seasoning
1 Onion, Med
1 Sweet Red Pepper
2 tsp pesto sauce
3/4 cup Ragu lite parm alfredo sauce
4 oz Mushrooms fresh, sliced
2 C fresh spinach
Tips
I cut my peppers and onions into pieces 1/4 inch by 1 inch and they were tender crisp. I don't like vegies too done.
Directions
Heat olive oil and crushed garlic in large skillet over med heat, add cut-up chicken, garlic salt and Italian seasoning.
While chicken is browning chop up onion, red peppers and spinach into one inch pieces. When chicken is about half done (about 5 min) add onions and peppers to skillet. Cook 2-3 min, add pesto and Ragu lite alfredo sauce, bring to a simmer and cook 2-3 min more. Add sliced mushrooms cook 2-3 min add spinach cook 1 more min, just until spinach is wilted. take off of heat and serve over pasta.
