Ingredients

    1 tsp. garlic powder
    4 garlic cloves
    1/2 tsp. salt
    1 C. chopped tomatoes
    1/4 tsp pepper
    1/2 chopped red onion
    (4) 4 oz. boneless chicken breast
    1/4 C. fresh basil
    1 Tbsp olive oil
    4 tsp. balsamic vinegar
    1 8oz pkg of mushrooms, sliced
    1 zucchini chopped
    1/4 C Parmesan cheese, grated

Tips

I like to use the thin cut chicken breast.


Directions

Combine garlic powder, 1/4 tsp salt and 1/8 tsp pepper. Sprinkle over chicken. Grill or bake until done. Meanwhile, heat oil in skillet. Add 1/4 tsp salt,mushrooms, zucchini and garlic. Saute 2 min. Add rest of pepper, tomato, onion, basil and vinegar. Saute 3 min. Serve over chicken. Sprinkle with cheese.
