Ingredients

    Haddock fillets, skinned, 16 oz.
    4 servings Emerils Bam Seasoning
    Canola Oil, 1 TBS
    Newman's Own Salsa (or any salsa you like)
    Crushed Pineapple, small can
    Fresh Cliantro (to taste, I like lots)

Directions

Prepare the haddock, pat dry and season both sides with Bam or any cajun-style seasoning you like. Heat the oil in a large frying pan. Saute the fish, turning once, til cooked. Remove to a platter and keep warm. Into the frying pan, add the salsa and crushed pineapple. Allow to cook til it thinkens and is heated through. Add freah cilantro and remove form heat right away. Spoon the salsa mixture over the fis and serve.
