Ingredients

    2 cups chopped onion
    2 cups chopped multi-color bell peppers
    4 cups fresh mushrooms, diced
    5 cloves garlic, minced
    11 ounces lean ham, diced
    4 cups packed fresh baby spinach
    1 TB. olive oil

Tips

With 6 TB of egg substitute and 1 oz. soft goat cheese, this omelette is 210 calories. Top with 2 TB. of salsa for an additional 10 calories for a delicious and filling breakfast.


Directions

Dice/chop/mince veggies (except for spinach). Add olive oil to large skillet and heat to a shimmer. Saute veggies until nearly tender. Add diced ham and heat. Add spinach and cook just until wilted. Makes filling for 10 omelettes. Store in refrigerator for about a week.
