Introduction

This is the best quiche recipe! It's versatile, easy, can be adapted any way you like. I make it in an 8x8 casserole dish, without the crust and love it! The family's rating: GREAT! 5 stars!!! Ingredients

    1 serving baby red potatoes (or 2 lg. red potatoes or other)
    2.66 servings canadian bacon
    1/4 cup milk (use 1/4 - 1/3 cup milk, not too much!)
    4 oz cheddar cheese
    5 large egg
    8 Tbs parmesean cheese shredded
    1/2 large onion
    1 1/4 cups spinach
    1 crust, single 9" frozen pie crust (or none at all for crustless - is absolutely perfect this way too!)

Tips

Tips: I like to use red potatoes or baby red potatoes & keep skin on!) (Can drop into ice water if need to stop cooking)

Directions

(Defrost pie crust? and pre-bake like 20 minutes?) Or don't use crust at all - I like it that way better!!!)
Cook potatoes in boiling water. Drain and dice. Place enough potatoes to cover nicely the bottom of the crust or dish.
Mix all other incredients and place in pie crust or square casserole dish.
Bake at 350 or 375 degrees until done.
