Ingredients

Beef chuck, arm pot roast, 32 oz
Tomato Paste, 0.5 cup
*Tomatoes, red, ripe, canned, wedges in tomato juice, 2 cup
Garlic, 6 clove
Onions, raw, 1 large
Chili powder, 2 tbsp
Cocoa, dry powder, unsweetened, 1 tbsp
*Cumin seed, 1 tbsp
Beans, white, 2 cup
*Extra Virgin Olive Oil, 4 tbsp
*Coriander leaf, dried, 1 tsp
Pepper, red or cayenne, 1 tsp
Salt, 1 tbsp
Paprika, 1 tbsp
Water, tap, 6 cup (8 fl oz)
*Chili's, green, diced, mild, Hatch's brand, 4 tbsp
Tips
Serve over rice with greek yogurt and jalapenos and enjoy!
Note: You can really substitute any meat for the chuck roast. (Ground beef, pork, turkey, chicken...whatever you like)
Directions
1. Heat the oil in a large saucepan. Add the meat and brown (about 4 minutes per side).
2. Remove meat and set aside
3. Add the garlic and onion, cook and stir until tender.
4. Add the green chilis and saute another minute.
5. Add the meat, beans, tomatoes, paste, water, and spices. Mix well.
5. Bring to a boil then reduce heat and simmer, covered, for 2-4 hours.
Serving Size: makes 21 .75cup servings
