Introduction

Ingredients

    12 oz Natural rolled oats
    4oz Oat Bran
    4oz Saltanas
    2oz Mixed fruit (dried cranberrys, saltanas etc)
    4oz Crushed mixed nuts (peanuts, brazil, almonds, hazelnuts - with or without added fruit)
    2oz Chopped walnuts
    2ox Semi skimmed milk powder
    6 heaped dessert spoons Flax seed (milled)
    1.5 tsp Cinnamon - ground
    9oz Peanut butter - smooth
    10oz Honey - runny
    100ml Fruit Juice concentrate i.e Robinsons sugar free (dont add water)

Tips

After I have packed the mixture into the tin , lay a piece of baking parchment over the top or the mixture and using a rolling pin, press and roll the mixture. This will allow the bars to remain much firmer and stop too much crumbling when eating (especially useful when on the tread mill!) I also score the mixture once it has been riolled as its much easier to cut when its cooled down


Directions

Mix all dry ingredients together ( you can substitute nuts for seeds if prefered ). Warm peanut butter and honey in microwave and pour over ingredients and mix thoroughly. Add approx 100ml of undiluted fruit juice - I used a mixed berry juice. Pack mixture into a lined baking tin approx 5 x 8 inch and about 3/4 inch deep bake at approx 175 degrees centigrade for 10 - 15 minutes (until sides start to go brown) Remove and allow to cool
