    *Wheat flour, white, bread, enriched, 1 cup
    Baking Powder, 2 tsp
    Almond oil, 4 tbsp
    Ricotta Cheese, part skim milk, 1 cup
    Egg White, 0.5 cup
    Sweetzfree 15 drops and 10 drops
    Limes 2+1
    Vanilla 1 tsp


Preheat oven to 350, prepare 12 muffin cups. In a bowl, mix flour and baking powder. Zest and juice limes. In mixer, add all wet ingredients except 10 drops of Sweetzfree and the zest and juice of 1 lime, and mix well. Add in flour mix slowly on low speed, until it is just incorporated. Divide into muffin cups and bake 20-25 min. Meanwhile, make the glaze by whisking together the zest and juice of the remaining lime with the 10 drops Sweetzfree. Drizzle over warm muffins.

Serving Size: Makes 12 muffins
