Ingredients

3 limes
1 cup all purpose white flour
2 tbsp white Sugar
2 tsp Baking Powder
1/4 cup Butter, unsalted (1/2 stick)
2 large Eggs
1 cup Ricotta Cheese, part skim milk
15+10 drops Sweetzfree
Directions
Preheat oven to 350, prepare 10 muffin cups.
Zest and juice limes.
In food processor mix flour, sugar and baking powder. Cut butter into chunks and cut into flour.
In large jug beat eggs until foamy. Add ricotta, 2/3 of the lime juice and zest and 15 drops of Sweetzfree, and beat well. Add to flour mix slowly on low speed, until it is just incorporated.
Divide into muffin cups with ice-cream scoop and bake 25-30min.
Meanwhile, make the glaze by stirring together the remaining lime juice and zest and 10 drops of Sweetzfree.
Drizzle glaze over warm muffins.
