Ingredients

    one egg
    1 cup fresh baby spinach
    1 tsp butter
    2 tbls shredded cheddar cheese
    Salt and Pepper to taste

Tips

It helps to have everything ready before you start melting butter to cook egg. For more information on omelet making see "Mastering the Art of French Cooking" by Julia Child.


Directions

Put spinach on a plate and microwave for 30 seconds.
Beat egg with salt and pepper. Measure out cheese.
Melt butter over med-high heat being careful to spread over entire surface. When hot pour in eggs and swirl around to coat the bottom of the pan and egg is spread evenly. When egg is set put spinach down the center and sprinkle on cheese. Gently fold sides over center and slip out of pan on to onto plate.
