    Broccoli, fresh, 2 cup, chopped
    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Salt, 1 tsp
    Paprika, 1 tsp
    Pepper, black, .5 tsp
    Parsley, .25 cup
    Sour Cream, 1 cup
    Olive Oil, 2 tbsp


Melt butter, saute over medium-low heat, add chopped onion, cook till golden. Add broccoli, mushrooms and 1/2 cup water.
Cover and Simmer until mushrooms and broccoli are tender adding more water if needed.
10-15 min
Add salt, paprika, pepper, half of the parsley and sour cream.
Heat slowly til hot, NOT boiling.
Sprinkle remaining parsley before serving

  • Very yummy! Great way to use up my fresh broccoli. I substituted fat-free sour cream for the regular, and 2 Tbsp extra virgin olive oil for the butter. Also added just a little bit of low-fat shredded cheddar on top. Thanks for a great side dish! - 2/9/09
