Introduction

Ingredients

    1 pound ground turkey (93% fat)
    1 large red bell pepper, chopped
    1 medium red onion, chopped
    6 cloves garlic, chopped
    1 tablespoon chili powder
    2 teaspoons cumin
    1/4 teaspoon cayenne pepper (optional)
    1 16 oz. can green chili enchilada sauce
    1 15 oz. can kidney beans (no salt added)
    1 15 oz. can diced tomatoes (low sodium)
    water (if needed)
    salt/pepper to taste

Tips

If chili is too thick add water to thin out.
Turkey can be substituted for any meat you desire.
Vary spices and peppers used to adapt to taste and heat level.


Directions

Chop red bell pepper and onion. Cook turkey with red bell pepper and onion, until the turkey is cooked. Stir in the garlic, chili powder, cumin, and cayenne pepper with the meat, red bell pepper, and onion. Stir in tomatoes, kidney beans, and enchilada sauce. Bring to a simmer. Reduce heat to low. cover and cook until all vegetables are tender (about 10 minutes.)
