Ingredients

    1 cup quinoa
    2 cups water
    1 can black beans, rinsed
    1 avocado, diced
    about handful of cherry tomatoes, cut into halves or 1/r
    juice of 1 lime
    juice of 1 lemon
    3 tbsp EVOO




Tips

The recipe is easily adaptable to what you have on hand and your taste. Add jalapenos for spice, green onions for crunch, chili powder. Get creative.


Directions

Cook quinoa according to directions.
When it's finished cooking, add rinsed black beans, cherry tomatoes, avocado, EVOO, lime juice and lemon juice. Stir to combine and eat! Good served warmed or chilled.
