Introduction

Just toss in a pan to warm up diced ingredients ... et voila! One of my favorite weekend lunches! Just toss in a pan to warm up diced ingredients ... et voila! One of my favorite weekend lunches!

Ingredients

    1 package fresh spinach
    1 large onion diced
    1 avocado diced
    5 large celery stalks

    1 lime - juiced
    Herbs and/or garlic

Tips

Light Rye and Light Cream Cheese toast not in calculation - just as a suggestion! You can also add tofu, bacon, egg and/or feta cheese... (also not in calculation...) ...


Directions

Spray a pan with non sticking cooking spray. Toss onion and celery until soften. Add avocado. Sprinkle with lime juice. Add spinach last. Do not cook too much - you want the veggies to be crisp and warm not "mushy"...
Herbs: I like cilantro or fresh sage... you can also spice it up with paprika and Cajun spices.

Serving Size: 2 large bowls
