Ingredients

    2 c. chicken broth
    1/4 of a medium onion, peeled
    1 stalk celery
    2 granny smith apples (peeled, cored and quartered)
    2 med. russet potatoes, baked, halved, cooled
    1/8 tsp dried thyme
    1/8 tsp ground nutmeg
    1/8 tsp black pepper
    1/2 tsp salt
    1 c. shredded cheddar cheese (I use sharp)

Tips

Serve garnished with sour cream and diced apples


Directions

Place all ingredients, except the cheese into the Vitamix container and secure the lid.
Select Hot Soups program and press start
Allow machine to complete programmed cycle
select variable 1 and slowly increases speed to 6 and remove the lid plug
drop in cheese through the lid plug opening and blend an additional 10 seconds.
