Ingredients

    2 Cups Red Mill Organic Quinoa Flour

    1/3 Cup Egg Whites

    1 Cup Lactose Free Skim Milk

    2 Tablespoons Melted Coconut Oil

    1-1/2 Teaspoons Baking Powder

    1 Cup Sunsweet Plum Amazins diced dried plums

    (1)4oz Mussleman's Cinnamon Lite Applesauce

    1/2 Teaspoons Cinnamon Powder

    1/2 Teaspoons Cardamom Powder

    1/2 Cup C & H Organic Blue Agave Light Nectar


Tips

Note you can buy store bought quinoa flour or grind quinoa seeds at home.

Make sure you spray your nonstick jumbo muffin pan and remember to spoon fill your muffin pan until half full so your muffins have room to rise and get golden brown.


Directions

Preheat oven to 375 degrees F

Mix dry ingredients in a large bowl. Melt coconut oil in a sauce pan on low heat. Mix wet ingredients in a medium bowl(beat egg whites together along with milk, melted coconut oil, agave nectar, and applesauce. Add wet ingredients to dry ingredients until well mixed. Gently fold in prunes.

Serving Size: Makes 8 Jumbo Muffins per servings
