Introduction

This is the MILK and EGG mixture containers from the 70's . people think kfc uses an egg wash and they do, just not like you think. They use egg powder and instant milk powder, added to the flour, not in a bowl and add water. i scaled down to 3 cups of flour (375 grms) and will add measurements after. Ingredients

    4 tbsp whole egg powder
    3 tbsp instant milk powder and i mean powder not granular like suger and must instantly disolve.
    1 tbsp unami for flavour enhancement of eggs also acts as a anti clumping agent.
    the milk is a cutter to eggs and will pick up the egg flavor, add msg to act as a declumper or to egg whites and enhances egg flavor.
    of course this is white to hide in flour and spices. The col. used whole egg powder (with yolk for full flavor), and msg as the enhanser as well as declumper.

Tips

the col. tells us there is more than just 11 ingrediants before the chicken is fried.. yes too figure out kfc don't think of herbs and spices think 11 ingredients and a few more like , flour , chicken , salt and pepper,
during the ww2 you had to use rations because of food shortages of dairy products and poultry products, so the col added whole egg powder to the flour and h&s and got that unique flavour thats kentucky..


Directions

sift a couple of times together through a flour sifter or fine screen sieve.
combine with spices first
so out of all the years of one thing that is a constant is egg powder and milk powder that is added to the flour. not to the pot of water, and this much makes it a seasoning or spice.. 3 ingrediants known as elements, msg is, as is milk powder and egg powder...
