Ingredients

1c. old fashioned rolled oats (not instant)
1c. nonfat milk
1c. whole wheat flour
2/3 c. unsweetened applesauce
2 egg whites
1 tsp. baking powder
1/2 tsp. baking soda
4-6 T. cocoa powder
1/2 tsp. salt
3-5 T. natural peanut butter
Directions
soak the oats in milk for about an hour.
Preheat oven to 400, and spray 8x8 pan with cooking spray. Combine the oats mixture with the applesauce and egg whites, and mix until combined. In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined. Add the peanut butter. Do not over-mix or the brownies will be tough. Spoon the mixture into the pan. Bake 20-25 minutes, or until done. Let cool and cut into 12 squares.
