Ingredients

    Buttermilk, lowfat, 1.5 cup
    *Leavening agents, baking powder, low-sodium, 2 tsp
    Baking Soda, 1 tsp
    Yellow Cornmeal, 1.75 cup
    Trader Joe's White Whole Wheat Flour, 188 gram(s)
    Egg, fresh, whole, raw, 3 small
    (my chickens are giving PeeWee size eggs at this time, 1 large will suffice)
    Carrots, raw, 1.5 large (7-1/4" to 8-1/2" long) chopped
    Scallions, raw, .5 cup, chopped
    *Bean sprouts, 0.5 cup chopped
    Duck, without skin, 8 oz ground

Tips

I like to put some sharp cheddar on top for the last 10 minutes of cook time.


Directions

Brown ground duck, carrots, onions, and bean sprouts in cast iron skillet. While that cooks, combine dry ingredients, add milk and egg, stir enough to combine no more no less. Stir in duck mixture, melt a bit of butter in the pan you cooked the duck in, pour everything back into the pan. Bake at 375 for 25-30 minutes.
