Ingredients

• 3 cloves of garlic, minced
• 1 cup chopped onion
• 1 TBSP Kerrygold Butter
• 1 pound fresh Criminni mushrooms, sliced
• 2 cups frozen spinach
• 1 tablespoon water
• 6 whole, cage free eggs
• 6 egg whites (1.125C liquid egg whites)
• Chili Powder to taste
• Ginger to taste
• Cayenne pepper to taste
• Black pepper to taste
• Parsley to taste
Tips
Can also add Feta Cheese, or substitute other vegetables for spinach and onions. Add spices and herbs for additional taste and health benefits!
Directions
Preheat oven to 350 F. In a 10-12-inch, ovenproof skillet, sauté garlic and onion in ½ TBSP Kerrygold Butter for about 5 minutes on low heat. Add in your mushrooms, then cook for an additional 5 minutes. Remove skillet from stove. In a separate saucepan, thaw spinach with water and remove any excess liquid if necessary. In a large bowl, beat together eggs and egg whites, parsley and pepper. Next, stir in the spinach, then mushroom and onion mixture. Melt remaining ½ TBSP Kerrygold butter in the skillet on stove over medium heat. Once the skillet is hot enough (butter will sizzle), spread the butter throughout the pan to prevent the eggs from sticking and pour in the egg mixture. Finally, remove from the stove and place in the oven, uncovered. Check the frittata in 10 minutes. Check every 5 minutes thereafter until center of frittata is slightly firm. Do not overcook. When frittata is done, place a large serving platter on top of the skillet and carefully flip the skillet over so that frittata falls onto the plate. Cut into six pieces and serve.
