Introduction

This is a recipe for a vegan version of Spanish lentils.

I prefer the French green lentils for this recipe, however the simmer time increases 1 - 2 hours, depending on the texture you desire. Use your favorite lentil variety or whatever is available to you. Pink lentils cook within 30 minutes, much faster than the green or brown versions. French green lentils take the longest but have a texture that I prefer.

Ingredients

    2 cups dried lentils
    6 medium tomatoes, diced OR 28 oz. can crushed tomatoes
    2 cups carrots, chopped
    2 large potatoes, diced
    1 medium onion, diced
    3-4 cloves garlic, mashed
    2 bay leaf
    1 tsp. cumin powder
    4 C. vegetable broth
    2 Tbs. olive oil
    3 Tbs. smoked paprika
    Salt and pepper to taste
    1/8 – 1/4 C. Tapatio hot sauce (optional)

Tips

To make this more like traditional Spanish lentils add 1 or 2 links of Soyrizo to the lentils while they're cooking. Once the lentils have reached the desired tenderness, take out the Soyrizo and cut into rings and add back to lentils before serving

Any hot sauce or salsa can be used in place of Tapatio, depending on your preference or what is available to you. Tapatio gets spicier as it cooks so beware if you don't think it's hot enough at first.

Spanish lentils are good served over cooked brown rice, which is NOT included in the nutritional information.

This recipe can easily be made in a crock pot.


Directions

In deep pot, sauté onion and garlic in oil until it starts to brown. Add remaining ingredients (except salt) and bring to a boil. Reduce to a simmer and cook until lentils are done. Check the cooking time for your particular lentils as some cook much faster than others. Cook time can be anywhere from 30 to 120 minutes on the stove top.

Add salt and pepper to taste.
