Introduction

Looking for dinner rolls without wheat flour or yeast. Really yummy! Took the recipie from Allergy Free Kitchen, but substituted teff flour for arrowroot flour, vegetable oil instead of sunflower oil, 2% milk instead of rice milk, and put into muffin tin instead of baking as a loaf. Ingredients

    Dry Ingredients
    1/2 cup potato starch (not flour)
    1/4 cup teff flour
    1/4 cup brown rice flour
    1 cup tapioca flour
    1/2 cup sweet rice flour
    1/2 cup almond flour
    3 tsp baking powder (gluten free)
    2 tsp xanthan gum
    1 tsp sea salt

    Wet Ingredients
    2 eggs
    1/2 cup sunflower oil
    1 cup + 1 tbsp rice milk

Directions

Mix dry ingredients together. Make well in the middle and add wet ingredients. Mix wet ingredients very well and then slowly add dry ingredients until a thick batter forms. Let stand 10 min. Bake in a preheated oven at 350* for 30 minutes until a toothpick comes out clean.
