Introduction

This is a good vegetarian or vegan curry, lots of protein, filling, and delicious. You can eat with rice or Indian bread (naan, chapati), or just by itself. Freeze in individual portions, perfect for grabbing for lunch and reheating. Ingredients

    •1.5 cups of cooked chickpeas
    •2 large onions
    •1 large tomato
    •1 tsp garam masala*
    •1 tsp garlic
    •1/2 tsp ginger
    •1 tsp chilli powder (medium spicy, increase/decrease to your preference for spiciness)
    •1 tbsp oil
    •1/2 tsp salt
    •Cilantro garnish

    *Garam masala is a pre-made spice mix you can get at many large or specialty Indian grocery stores – blends are different based on brand, but can include pepper, cloves, cinnamon, cumin, and cardamom

Directions

Heat oil and add the onions. Saute until golden brown, and add the ginger and garlic. Fry for another 30 seconds. Add the tomatoes and cook until they are mushy and soft, then use stick blender to make it smooth.

Return to the same pan and add the cooked chickpeas (canned), chili, salt and some water. Bring to boil and simmer for a few minutes. Add the garam masala, top with cilantro.

Freeze in individual lunch-sized portions.
