Ingredients
-
red kidney beans, 2 cans, drained and rinsed (about 3 cups)
1/3 cup Newman's Own Bandito Salsa (medium)
1-1/4 cups Sargento light 4-cheese mexican blend shredded cheese
3/4 cup Breakstone fat-free sour cream
Tips
These can also be heated individually in the microwave. They also reheat well, and are tasty hot or cold.
Directions
Preheat oven to 350 degrees. In a food processor, combine kidney beans with salsa. Pulse until mixture forms a lumpy paste, like oatmeal. Meanwhile, heat tortillas in the microwave 1 minute.
Place 1/4 cup of the bean mixture in the center of a tortilla. Top with 1 Tbsp shredded cheese and 2 tsp sour cream. Fold one side of the tortilla over the mixture, then fold in the sides, then roll towards the open edge, trapping the filling inside to make a burrito. Place edge side down on a baking sheet. Repeat with other 9 tortillas to make 10 burritos. Cover with foil. Bake at 350 degrees 25-30 minutes until heated through.
