Ingredients

    5 red, yellow or orange peppers
    1 lb browned ground beef
    1/2 chopped onion
    1 Tbsp taco seasonoing- heaping
    2 cups cooked brown rice
    1 can black beans
    16 oz salsa
    1/4 cup shredded cheddar cheese

Directions

Preheat oven to 450. Cut the peppers in half from top to bottom, clean out and rub with olive oil, bake on cookie sheet for 20 min. Brown hamburger and onion together, add taco seasoning then add salsa, beans & rice. Put mixture into peppers halves and bake for 20 min. remove from oven sprinkle with cheese and place bake in oven for 5 min.
