Ingredients

*All Natural Original PAM No Stick Cooking Spray
Spinach, fresh, 2 cup
Aldi Specially Selected Prosciutto Panino, 8 oz
Egg substitute, liquid (Egg Beaters), 2 cup
Thomas Bagel Thin (100% Whole Wheat), 12
Tips
The cheese will bubble out a bit but oh how yummy!
I often freeze the eggs in a container. Make sure there is not condensation or you will have freezer burn. You could wrap them in paper towel to absorb any water.
Just reheat in the microwave and pop them on a freshly toasted bagel thin, English Muffin or whatever, whenever!
Directions
Preheat oven to 350 F
1. Spray 12-muffin tin with Pam.
2. Tear spinach and divide into bottom of each muffin section.
3. Cut Prosciutto Panino in to 12 slices and lay on top of each spinach nest. (I add more spinach to top too)
4. Pour Egg Beaters just to cover each.
Bake at 350 F for 20-30 min, checking for doneness as you go.
Toast bagel/s, sandwich and enjoy! :)
