Introduction

This is a recipe that was handed down to me from my pastor's wife when I was a young mother. I use the recipe for Powdered Cream of Chicken Soup Mix and home canned chicken, but you could use leftover chicken and canned cream of chicken soup. Ingredients

    Powdered Cream of Chicken Soup Mix, eq of 2 cans
    1 lb. Broccoli, frozen
    1 lb Chicken Breast home-canned, skinless
    1 cup Hellmans Light Mayonaise
    1 tsp Lemon Juice
    1 tbsp Curry powder
    1/2 cup shredded cheddar cheese
    2 Tbsp Saltine Crackers, crushed

Tips

You could also cook rice before hand and add this as the bottom layer of this casserole.


Directions

Make cream of chicken soup mix using broth from chicken for some of the water, set aside to cool.
Steam broccoli in the microwave for 5 minutes.
Set oven to preheat to 300* F.
Arrange broccoli in a 9x13 baking dish.
Arrange chicken on top of broccoli
Mix soup, mayo, lemon juice and curry powder and pour over broccoli and chicken
Sprinkle shredded cheese over top
Sprinkle cracker crumbs over cheese
Bake 30 minutes
Serve over brown or white rice
