Ingredients

    12 oz. albacore tuna - canned in water (2 cans)
    14 oz. salmon - canned in water (2 cans)
    3 slices whole wheat bread
    3 eggs
    1/2 cup chopped fresh onion
    1/2 cup chopped fresh celery
    1/2 cup mayonnaise

Directions

Turn oven to 350 degrees. Drain tuna and salmon and put drained fish in a mixing bowl. Break eggs into a small bowl, whisk with fork until blended. Put bread chunks in a food processor and crumble (or use dry old-fashioned oatmeal). Add celery and onions and mix with a fork until combined.

Turn mixture into a loaf pan that has been sprayed with a cooking spray. Smooth out top and spread mayonnaise over the top. Bake 35 minutes or until it looks done.

Alternative: Make 8 patties from the fish mixture. Spray a large cookie sheet and put patties on the sheet. Bake 15 minutes or until they look a little browned. They can be frozen and used for fish burgers.

    Incredible!
    ...similar to an old family favorite since i was a kid! I will use this version - downsized to serve 4... makes room for leftovers that way! ;-) - 4/11/08
