Ingredients

    1 bunch kale, chopped (about 4 cups)
    2 tbsp sesame seeds, toasted
    2 tbsp sesame oil
    1 tbsp fresh ginger roots, grated
    2 tbsp apple cider vinegar
    1/8 tsp salt
    1/8 tsp pepper

Tips

It actually is better if you let it sit in the fridge for a few hours or overnight. All the flavors really blend together.


Directions

Bring 4 cups of water to a boil, and prepare a bowl of ice water. Blanch the kale for about 30 seconds and place in ice water. Once cool, drain.

Mix remaining ingredients in a small bowl until well combined. Add to drained kale and toss to combine.

Serving Size: Makes 2 large lunch servings
