I love to make foods that are a fusion of Mediterranean and Mexican. This low fat dip fits the bill, but all you need to do is change the seasonings to customize it. Ingredients

1 red bell pepper, cut into 1" squares
2-3 cloves garlic, halved
1 jalapeno pepper, quartered
1 tsp. olive oil
Fresh ground pepper to taste
Sea salt to taste (optional)
1 can chickpeas, no salt added
1 tsp. ground cumin
1/8 tsp. chipotle chile powder
1/2 tsp. each, dried parsley and dried cilantro
1/4 tsp. dried oregano
crushed red pepper flakes to taste (optional)
1 tsp. water (you can use lemon or lime juice, too)
Tips
Seed and de-vein your jalapeno for a mild spread, or not if you want a dip with more attitude.
Directions
Stir together first 6 ingredients. Wrap in a double layer of foil. Cook on grill on medium heat for about 10 minutes. Increase heat to high and grill foil packet for 5 minutes on each side.
Carefully unwrap (Use grilling tongs so you don't get burned) the packet; transfer pepper mixture to food processor. Add remaining ingredients and pulse until well-mixed, making it chunky or smooth as you see fit.
Serve warm or cold with veggies for dipping.
