So many colors in one little soup! So many colors in one little soup!
Number of Servings: 6


    1 lb ground beef (or turkey or chicken)
    1 cup shredded cabbage
    2 carrots, peeled and sliced
    2 ribs of celery, sliced
    2 potatoes, cubed (optional)
    1 zucchini, chopped
    1 summer squash, chopped
    2 (14.5 oz) cans diced tomatoes
    1 lg onion, chopped
    1 bay leaf
    salt & pepper
    seasonings to taste (oregano, thyme, cilantro, basil, garlic)


Throw everything into the crock-pot, set to low for 8 hours or high for 3-5 hours. So easy!

*Potatoes may be left out for a low carb option
