Introduction

I can't eat cream of mushroom soup, and I don't really like the metallic taste it leaves behind. This simple recipe can be adjusted to accommodate whatever leftovers you have in the fridge! Number of Servings: 12

Ingredients

    1T Olive Oil
    1C Onion, diced
    2lbs Ground Beef, lean
    1T Mc Cormick Beef Seasoning
    2T Beef soup base
    1.5C Portabella Mushrooms, chopped
    .5C Corn
    1.5 Peas
    3C Beef stock
    2T Cornstarch
    4C Brown rice, cooked

Directions

Saute onion in olive oil until transparent, add ground beef and beef seasoning. Cook until done. Drain, but do not rinse off seasoning. Return to stove, add soup base and mushrooms, stir until incorporated about 3 minutes. Add corn, peas, and stock(reserve 1/2C for cornstarch) and cook until soft boil. Add cornstarch to reserved stock to make a slurry, and pour into beef mixture. Stir until slightly thickened, add rice, and cook another 3 minutes.
